Garlic Butter Steak & Potatoes

Okay guys, this is an all in one skillet kind of meal and you will be in awe of the flavor that it creates! So simple with limited ingredients and bursting with delicious bite after bite!

I have tried experimenting with different kinds of meats and potatoes, but I love a nice lean cut and the baby goldens just pair so perfectly! And if you know me, you’re probably wondering, steak? like red meat? And the answer is yes! I know I tend to cook mostly with chicken, turkey or seafood, but I am trying to incorporate a healthy amount of iron rich meat into my diet.

My little guy has been lending his culinary skills to the kitchen!

Below is the list of ingredients and recipe! You may use non fresh herbs if you’d like, but for optimal taste I did choose to use fresh. I hope you find this meal as delicious as we all did. These baby goldens are so good!

Ingredients:

  • Flank steak but feel free to try ribeye steak, tenderloin, strip loin, or strip steak
  • 1 1/2 lb baby golden potatoes whole (if you choose a bigger potato, you can dice in quarters or halves)
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons unsalted butter, divided
  • 5 garlic cloves, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh oregano, chopped
  • Salt and pepper
  • Shredded parmesan cheese

Marinade:

  • 1/3 cup low Sodium soy sauce (I use low sodium so it doesn’t become too salty)
  • 1 tablespoon extra virgin olive oil

Recipe:

1. To get started, lets grab a large bowl, mix in your steak strips (remember you need to cut them into strips before hand) with the soy sauce and olive oil. You can set this aside and have steak strips marinate while preparing the potatoes.

2. Over medium-high heat in a large skillet, mix 1 tablespoon olive oil and 1 tablespoon unsalted butter. Butter will melt and then we will add in our potatoes. Cook for about five minutes, stirring frequently & cook an additional 6-7 minutes until potatoes are nice and soft. Go ahead and put the sautéed potatoes on a plate and set aside.

3. While using the same skillet over medium heat add in your remaining 2 tablespoons unsalted butter, garlic, and herbs. Section the steak strips side by side in skillet and keep the steak marinade for later. (makes a yummy sauce over the steak and potatoes!) Cook the steak strips on each side for 5 minutes each, until nice and browned. You can always adjust cooking time depending on how you like your steak.

4. Right before the steak is done, you can pour in the reserved marinade and cook for one additional minute. Now add in the potatoes along side the steak pan cook together while stirring. Season with salt and pepper.

5. Turn heat to low or off and serve your garlic butter steak and potatoes, garnish fresh herbs, and a light sprinkle of parmesan cheese over the potatoes if you like. Enjoy it with a Focaccia bread or for carb conscious you can pair with grilled veggies like asparagus or roasted carrots!

Sprinkle on that parmesan cheese for added flavor!
